Today I started pondering an idea I have had for a little while. When I get old and gingered I think I want to open a diner or a b&b. I have thought about it before but what made today different is that I actually started writing out menu ideas. I actually really enjoyed the brainstorming.


If you know me you know I love to cook. Someone could name a main dish or say I feel like something and I for some reason can pair up a meal in just a few minutes. Not sure if my idea would work but I made some banana nut bread last night and I am definately sure that will be on the menu.

I also got invited to go camping at the Illinois River in Western Oklahoma. Amazing isn't it. Here I was just a few days ago wanting to go and the opportunity shows up. I hope it works out because I have always wanted to go to the location I was invited too. Some of the activities that are apart of the trip are kayaking or canoeing down the river, eating around a fire, swimming, and just plain messing around with old friends. I am super excited about it. My son would also be able to go and hang out with some of his childhood buds. I love making hot dogs over a fire. I wish we could also go fishing but the job situation kind of puts a money problem which means I can't get a fishing license right now. I can hear the birds waking me up and the crickets singing me to sleep. Ta ta for now...

Why wait until Your old and ginger? Why not start planning it now and have an alredy finished idea when going to the bank? I had a dream og having a gardencenter for a long time. I already had everything clear in my mind when the opportunity came. So there were no problems when I went to the bank.

Well it didn´t work out for me, but that doesn´t mean it woun´t do it for You!

Banana nut bread? Have enever heard abot it, what is it?

How great that You can go camping! But it´s not fun when ones finances are limited. Here we can go fishing in the five biggest lakes and by the ocean for free thankfully. I dson´t mind not getting any fish though, I just love sitting there by the water listening to the waves :-)

Banana nut breat is a kind of sweet quick bread (doesn't use yeast) that is kind of a tradition here. I make it from 2 cups of flour, 1/2 cup of sugar, 2 teaspoons of baking power, 1 teaspoon of baking soda, 1/2 tsp of salt, 1 cup of butter or margarine, 2 eggs, 3 ripe bananas mushed up,1 box of instant vanilla pudding, 1/3 cup of milk and 1/3 cup of chopped walnuts or pecans. You mix your dry ingredients first... the slowly add the others in the order I put them and mix. take to loaf pans and grease them. Fill them each with half of the mixture and smooth out the top. Bake for 15 - 20 minutes at 350 F. After it has baked all the way you should have cracks on the top of the loves.. this is expected. When you take them out wrap them in foil or something so them can sit overnight. I don't know what all that translates to you... sorry. In the morning however you will have a nice breakfast to eat with your coffee.. i like it with cream cheese or butter. Does that make sense? Hope you can make it christer and let me know how it goes.

I´ll try that one day. We have old recipes with cups and translations to what that means in todays measuring :-)

My hubs wanted to open a diner and I cook the menu. I love to cook. But the stress of it all sort of tabled the idea for awhile. Maybe one day. That is on the dream list. :)
